How To Prepare Sencha

Things You Will Need

  • Tea pot (200ml size or larger)
  • Tea cups (2 cups)
  • Sencha (4 to 6 grams for 2 cups)
  • Hot water (90°C for general sencha, 70°C for high-grade sencha)
  • Extra tea cups for cooling down hot water (optional)

Instructions

Step1
Pour hot water in the tea pot and tea cups to warm up the pot and cups.

Measure 4 to 6 grams of sencha and put into the tea pot.

Adjust the temperature of the hot water to 90 degrees Celcius for general sencha and 70 degrees Celcius for high-grade sencha.

If you don't have a thermometer, just move the hot water from cup to cup to cool down the temperature of the hot water. If you move the hot water from a cup to another cup, hot water will lose about 10°C of its temperature. To make 90°C hot water, pour boiling water to a cup once. Then the water in the cup will be 90°C.

Pour the temperature adjusted hot water from the tea cups to tea pot.

Wait for 1 minute for general sencha and 2 minutes for high-grade sencha.

Hold the lid of the tea pot with your thumb and pour the tea into the cups little by little. Pour in first cup and then to second cup, repeat this several times.

When tea pot is almost empty, rapidly move the pot up and down to pour the last drop of tea in the cup.
